The Niagara Region is Canada’s leading producer of icewine, and the leader in icewine production worldwide. Although icewine has been around in Ontario for many years, it wasn’t until 2001 that Canada began exporting icewine overseas.
Over the last ten years the industry has grown enormously with markets in Europe, China and Japan. Anyone who has ever tasted icewine can attest to its sweet, concentrated flavour. However, to make a bottle of icewine is a much more complicated procedure than producing a bottle of regular wine. It takes roughly 5 times as many grapes to make the same amount of icewine.
